Easy, Moist, and Chewy Macaroons

This is a very simple recipe, easy enough for children and nice for the Holidays!

2 bags sweetened coconut (14 oz. bags or 28 oz. total)

1 can sweetened condensed milk

2 tsp. vanilla extract

1/2 tsp. almond extract

Preheat oven to 325 degrees fahrenheit.  In a large bowl, mix the extracts into the condensed milk.  With a spoon, throroughly stir in both bags of coconut.  Drop spoonfuls of coconut onto a greased cookie sheet.  The spoonfuls should be mounded but NOT tightly packed – more of a free form.  Leave about 1 inch between cookies.

Bake at 325 degrees until golden brown, about 10 minutes.  Remove from cookie sheet immediately onto a rack to cool.  Yields about 60 cookies.
